NIGELLA'S SPONGE DROPS
These are from Nigella Lawson's 'How to be a Domestic Goddess' book - they truly are to die for....Perfect for afternoon/morning tea when freshly made.
For the Sponge Drops:
Ingredients:
2 large eggs
75g caster sugar
25g cornflour
50g self raising flour
1/2 teaspoon baking powder
2 baking sheets - greased or lined
Method:
Preheat the oven to 200°C/gas mark 6
Lightly whisk the eggs, then add the sugar and whisk again until the mixture becomes pale, creamy and voluminous: use an electric beater of some sort here.
Sieve in the flours and baking powder, and fold them in with a metal spoon. This mixture is quite runny.
Spoon teaspoon sized amount onto the baking sheets, leaving room between as they do spread. I did it using a dessert-spoon as suggested and I think they are too big. The teaspoon will make nice little bite sized drops.
Cook for 5 minutes, then remove them with a metal spatula (a plastic egg flip won't be fine enough to get underneath!) to cool on a rack.
When they are cool, sandwich them with whipped cream, jam and crushed berries.
DELICIOUS!!
For the filling:
Ingredients:
150ml double cream, whipped
5-6 tablespoons blackberry (or other) jam
1 punnet of blackberries (or other berries)
