GRILLED LIME & PEPPER OCEAN TROUT
Another delicious meal - taken from Women's Weekly quick meals book.
2 teaspoons lime rind - finely grated
1/2 teaspoon cracked black pepper
I red chilli - finely chopped seeds removed
2 tablespoons olive oil
2 tablespoons finely chopped chives
4 ocean trout cutlets/fillets/pieces
1 red onion
2 medium limes
Combine rind, pepper, chilli, oil and chives in a large bowl.
Add fish - turn and coat. Cover and refrigerate for a couple of hours.
Cut onion and limes into wedges.
Grill fish (or BBQ), onion and limes until onions/limes are browned and fish is browned on both
sides and just cooked through. (Approx. 4 minutes each side - make sure the first side is well
cooked before turning or the fish will fall apart).
Serve with onion and lime and other vegetables.
